Traditional Quebec recipe: Alderwood Smoked Brook Trout. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 whole brook trout
  • 1 For the Brine
  • 1 L water
  • 80 ml salt
  • 60 ml grated maple sugar
  • 1 tbsp coriander seeds
  • 6 juniper berries
  • 1 Alderwood Chips

Instructions

    Prepare the brine with all ingredients. Cool completely.

    Brine the trout for 4-6 hours.

    Rinse and dry for 2-3 hours in the refrigerator.

    Hot smoke at 200°F (95°C) with alder for 1h30 to 2h.

    Alder is the traditional wood of the First Nations for smoking fish.

    It imparts a delicate and slightly sweet flavor.
