Traditional Quebec recipe: Atlantic Salmon Tartare. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 400 g very fresh Atlantic salmon
  • 2 chopped French shallots
  • 1 tbsp capers
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1 tbsp chives
  • 1 diced avocado
  • 1 Sesame seeds
  • 1 Salt and pepper

Instructions

    Cut the salmon into small, uniform cubes with a knife.

    Mix the shallots, capers, oil, lime juice, and zest.

    Gently fold in the salmon. Season with salt and pepper.

    Plate using a ring mold. Garnish with avocado, chives, and sesame seeds.

    Serve immediately with wonton chips.
