- 400 g very fresh Atlantic salmon
- 2 chopped French shallots
- 1 tbsp capers
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp lime zest
- 1 tbsp chives
- 1 diced avocado
- 1 Sesame seeds
- 1 Salt and pepper
Instructions

Cut the salmon into small, uniform cubes with a knife.

Mix the shallots, capers, oil, lime juice, and zest.

Gently fold in the salmon. Season with salt and pepper.

Plate using a ring mold. Garnish with avocado, chives, and sesame seeds.

Serve immediately with wonton chips.
