Ingredients
- 4 walleye fillets
- 2 zucchini, sliced
- 2 tomatoes, sliced
- 1 red onion, sliced
- 1 yellow bell pepper, strips
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp Herbes de Provence
- 1 Salt and pepper
Instructions

Preheat the oven to 400°F (200°C).

Mix the vegetables with the oil, garlic, Herbes de Provence, salt, and pepper.

Spread in a baking dish. Cook for 15 minutes.

Place the walleye fillets on top of the vegetables. Season with salt and pepper.

Return to the oven for 12-15 minutes.
