Traditional Quebec recipe: Baked Walleye on a Bed of Vegetables. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 walleye fillets
  • 2 zucchini, sliced
  • 2 tomatoes, sliced
  • 1 red onion, sliced
  • 1 yellow bell pepper, strips
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp Herbes de Provence
  • 1 Salt and pepper

Instructions

    Preheat the oven to 400°F (200°C).

    Mix the vegetables with the oil, garlic, Herbes de Provence, salt, and pepper.

    Spread in a baking dish. Cook for 15 minutes.

    Place the walleye fillets on top of the vegetables. Season with salt and pepper.

    Return to the oven for 12-15 minutes.

    The walleye cooks in the steam from the vegetables and remains tender.
