Ingredients
- 4 L cold water
- 320 ml coarse salt(pickling salt)
- 250 ml brown sugar
- 2 tbsp black peppercorns
- 4 bay leaves
- 1 tbsp mustard seeds
- 4 cloves
Instructions

Bring 1 L of water to a boil. Dissolve the salt and sugar.

Add all spices. Let steep for 15 minutes.

Add the remaining 3 L of cold water. Cool completely.

The brine MUST be cold before immersing the fish.

This basic recipe is suitable for most fish.

Brining time depends on fillet thickness (see time guide below).

Thin fillet (1 cm) = 2-4h, medium (2 cm) = 4-8h, thick (3 cm+) = 8-12h.
