Traditional Quebec recipe: Basic Brine for Smoked Fish. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 L cold water
  • 320 ml coarse salt(pickling salt)
  • 250 ml brown sugar
  • 2 tbsp black peppercorns
  • 4 bay leaves
  • 1 tbsp mustard seeds
  • 4 cloves

Instructions

    Bring 1 L of water to a boil. Dissolve the salt and sugar.

    Add all spices. Let steep for 15 minutes.

  3. 3

    Add the remaining 3 L of cold water. Cool completely.

  4. 4

    The brine MUST be cold before immersing the fish.

  5. 5

    This basic recipe is suitable for most fish.

    Brining time depends on fillet thickness (see time guide below).

  7. 7

    Thin fillet (1 cm) = 2-4h, medium (2 cm) = 4-8h, thick (3 cm+) = 8-12h.
