Traditional Quebec recipe: Beer-Braised Venison. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 venison piece(shank or shoulder)
  • 500 ml Quebec red ale
  • 2 sliced onions
  • 3 carrots, cut into chunks
  • 2 tbsp brown sugar
  • 2 tbsp whole grain mustard
  • 2 tbsp vegetable oil
  • 1 tsp dried thyme
  • 1 Salt and pepper to taste

    Preheat oven to 325°F (165°C).

    Sear the meat on all sides in hot oil.

    Place the onions and carrots at the bottom of a Dutch oven.

    Place the meat over the vegetables.

  5. 5

    Mix the beer, brown sugar, and mustard. Pour over the meat.

    Sprinkle with thyme, salt, and pepper.

    Cover and bake for 3 hours.

    The meat should fall apart easily with a fork.
