Ingredients

  • 6 medium cooked, peeled, and sliced beets
  • 250 ml white vinegar
  • 125 ml water
  • 125 ml sugar
  • 1 tsp salt
  • 1 onion, sliced into rings
  • 6 whole cloves
  • 1 cinnamon stick
  • 5 peppercorns

Instructions

    Cook whole beets in boiling water for 45-60 minutes. Peel and slice them.

    In a saucepan, combine the vinegar, water, sugar, salt, and spices.

    Bring to a boil and simmer for 5 minutes.

    Arrange the beets and onion slices in Mason jars.

    Pour the hot liquid over the beets. Seal the jars.

    Refrigerate for at least 48 hours before serving. Keeps for 1 month in the fridge.
