Traditional Quebec recipe: Boulettes d'orignal sauce brune. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 750 g ground moose meat
  • 1 beaten egg
  • 80 ml breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 1/2 tsp pepper
  • 1 1/4 tsp ground cloves
  • 1 1/4 tsp cinnamon
  • 3 tbsp butter
  • 3 tbsp flour
  • 500 ml beef broth
  • 2 tbsp Worcestershire sauce

Instructions

    Mix the ground meat, egg, breadcrumbs, onion, garlic, and spices.

    Form golf ball-sized meatballs.

    Brown them in butter in a large pan. Set aside.

    In the same pan, add flour and cook for 2 minutes, stirring.

    Gradually pour in the beef broth, whisking to prevent lumps.

    Add Worcestershire sauce. Let thicken.

    Return the meatballs to the sauce and simmer for 30 minutes over low heat.

    Serve over mashed potatoes.
