Traditional Quebec recipe: Bourguignon d'orignal. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 kg moose cubes
  • 200 g smoked lardons
  • 20 small pearl onions
  • 250 g whole button mushrooms
  • 3 carrots, cut into chunks
  • 3 cloves garlic, minced
  • 750 ml red wine
  • 250 ml beef broth
  • 2 tbsp tomato paste
  • 1 bouquet garni(thyme, bay leaf, parsley)
  • 3 tbsp flour
  • 3 tbsp butter
  • 1 Salt and pepper to taste

Instructions

    Brown the lardons in a Dutch oven. Set aside.

    Flour the moose cubes and brown them in the lardon fat.

    Add the garlic, deglaze with red wine.

    Add the broth, tomato paste, and bouquet garni.

    Cover and simmer for 2 hours over low heat.

    Brown the pearl onions and mushrooms in butter.

    Add the onions, mushrooms, lardons, and carrots to the stew.

    Continue cooking for 45 minutes. Serve with steamed potatoes.
