Traditional Quebec recipe: Lièvre braisé à la moutarde. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 hare, cut into pieces
  • 3 tbsp Dijon mustard
  • 250 ml 35% cream
  • 250 ml white wine
  • 2 chopped onions
  • 3 garlic cloves
  • 3 tbsp butter
  • 200 g sliced mushrooms
  • 1 Fresh thyme sprigs
  • 1 Salt and pepper

Instructions

    Brush the hare pieces with mustard.

    Brown them on all sides in butter.

    Add the onions and garlic, cook for 3 minutes.

    Deglaze with white wine. Add the thyme.

    Cover and simmer for 1 hour 30 minutes over low heat.

    Add the mushrooms, cream, and an extra tablespoon of mustard.

    Continue cooking for 30 minutes without boiling.

    Serve with fresh pasta.
