Ingredients

  • 1.5 kg moose shoulder or round, cubed
  • 500 ml beef broth
  • 250 ml red wine
  • 3 onions, quartered
  • 4 carrots, cut into chunks
  • 3 potatoes, quartered
  • 3 garlic cloves
  • 2 tbsp oil
  • 2 tbsp flour
  • 1 Bay leaf, thyme, juniper berries, salt and pepper

Instructions

    Flour the seasoned moose cubes.

    Brown them in oil in a Dutch oven. Work in batches.

    Add the onions and garlic, cook for 3 minutes.

    Deglaze with red wine and add the broth.

    Add the bay leaf, thyme, and juniper berries. Cover and bake in the oven at 150°C (300°F) for 2 hours.

    Add the carrots and potatoes. Cook for another 1 hour.
