Traditional Quebec recipe: Brandade de brochet. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g poached and flaked pike
  • 3 cooked and mashed potatoes
  • 125 ml olive oil
  • 125 ml warm cream
  • 3 cloves garlic, crushed
  • 1 juice of one lemon
  • 1 salt, pepper, and nutmeg
  • 1 breadcrumbs and cheese for gratin

Instructions

    Mix the flaked pike with the mashed potatoes.

    Alternate adding garlic, olive oil, and warm cream.

    Add lemon juice and nutmeg. Season.

    Pour into a gratin dish.

    Sprinkle with breadcrumbs and cheese.

    Bake in the oven at 400°F (200°C) for 20 minutes until golden.
