Traditional Quebec recipe: Brochet farci au four. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 brochet entier de 1,5-2 kg nettoyé
  • 200 ml chapelure
  • 1 oignon haché finement
  • 2 branches de céleri en petits dés
  • 2 tbsp persil frais
  • 2 tbsp beurre fondu
  • 1 oeuf battu
  • 1 Zeste d'un citron
  • 4 tranches de bacon
  • 1 Sel et poivre

    Preheat the oven to 350°F (175°C).

    Mix the breadcrumbs, onion, celery, parsley, butter, egg, and zest.

    Salt and pepper the pike's cavity. Stuff with the mixture.

    Close with toothpicks. Wrap with bacon.

    Bake for 40-50 minutes (10 min per inch of thickness).

    Pike has firm, white flesh, which is excellent when stuffed.
