Traditional Quebec recipe: Caribou Bourguignon with Dark Beer. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 kg caribou cubes
  • 500 ml dark beer(Quebec stout)
  • 200 g lardons
  • 250 g sliced mushrooms
  • 2 diced onions
  • 3 sliced carrots
  • 3 garlic cloves
  • 2 tbsp brown sugar
  • 2 tbsp tomato paste
  • 3 tbsp flour
  • 1 Thyme and bay leaf
  • 1 Salt and pepper

Instructions

    Brown the lardons. Set aside.

    Flour and brown the caribou cubes. Set aside.

    Sauté the onions and garlic in the fat.

    Add the tomato paste and brown sugar. Cook for 2 minutes.

    Deglaze with the dark beer. Return the meat and lardons.

    Add the thyme and bay leaf. Simmer for 2 hours.

    Add the carrots and mushrooms. Continue cooking for 45 minutes.

    The dark beer adds a unique richness and depth.
