Traditional Quebec recipe: Caribou Roast with Boreal Herbs. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 1.5 kg caribou roast
  • 2 tbsp dried Labrador tea(or rosemary)
  • 1 tbsp crushed juniper berries
  • 2 tbsp olive oil
  • 4 unpeeled garlic cloves
  • 1 quartered onion
  • 250 ml red wine
  • 250 ml beef broth
  • 1 Salt and pepper to taste

Instructions

    Preheat the oven to 325°F (165°C).

    Mix the Labrador tea, juniper, oil, salt, and pepper.

    Rub the roast with this mixture and let it come to room temperature for 30 minutes.

    Sear the roast on all sides in a Dutch oven.

    Add the garlic, onion, wine, and broth.

    Cover and bake for 2h30 to 3h.

    Let rest for 15 minutes. Reduce the cooking liquid for the sauce.
