Traditional Quebec recipe: Caribou and Root Vegetable Stew. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 kg caribou cubes
  • 3 parsnips, cut into pieces
  • 3 carrots, sliced
  • 1 celeriac, cubed
  • 1 rutabaga, cubed
  • 2 onions, quartered
  • 500 ml beef broth
  • 250 ml apple cider
  • 2 tbsp tomato paste
  • 3 tbsp oil
  • 1 Thyme, rosemary, salt and pepper

Instructions

    Brown the caribou cubes in oil. Set aside.

    Sauté the onions for 3 minutes.

    Deglaze with apple cider. Add the tomato paste and broth.

    Return the meat to the pot with the thyme and rosemary.

    Simmer, covered, for 1 hour and 30 minutes.

    Add all the root vegetables and continue to cook for 45 minutes.

    The root vegetables pair perfectly with the flavor of the caribou.
