Traditional Quebec recipe: Caribou Tartare with Blueberries. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 400 g very fresh caribou fillet(frozen for a minimum of 72h)
  • 2 tbsp fresh wild blueberries
  • 2 chopped French shallots
  • 1 tbsp Moutarde de Meaux
  • 2 tbsp walnut or olive oil
  • 1 tbsp cider vinegar
  • 1 Chopped chives
  • 1 Sea salt and pepper to taste
  • 1 Crispy bread chips

Instructions

    Cut the caribou into small, regular cubes with a knife.

    Mix the shallots, mustard, oil, and vinegar.

    Gently fold the meat into the sauce.

    Arrange on plates using a pastry ring.

    Garnish with fresh blueberries and chives.

    Season with salt and pepper at the last moment.

    Serve immediately, very cold, with bread chips.
