- 2 tbsp fresh wild blueberries
- 2 chopped French shallots
- 1 tbsp Moutarde de Meaux
- 2 tbsp walnut or olive oil
- 1 tbsp cider vinegar
- 1 Chopped chives
- 1 Sea salt and pepper to taste
- 1 Crispy bread chips

Cut the caribou into small, regular cubes with a knife.

Mix the shallots, mustard, oil, and vinegar.
