Traditional Quebec recipe: Caribou Tourtière. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g ground caribou
  • 250 g ground veal
  • 250 g ground pork
  • 2 chopped onions
  • 2 garlic cloves
  • 250 ml beef broth
  • 1 tsp salt
  • 1 1/2 tsp pepper
  • 1 1/4 tsp ground cloves
  • 1 1/4 tsp cinnamon
  • 1 1/4 tsp savory
  • 2 pie crusts
  • 1 beaten egg(egg wash)

Instructions

    Combine the three meats, onions, garlic, broth, and spices in a saucepan.

    Cook over medium heat for 25 minutes, breaking up the meat.

    Let cool completely.

    Line a pie dish with one crust, then pour in the cooled filling.

    Cover with the second crust, seal, and prick.

    Brush with beaten egg.

    Bake at 400°F (200°C) for 35 minutes.
