Traditional Quebec recipe: Chili d'orignal. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 750 g ground moose meat
  • 1 can of drained kidney beans(540 ml)
  • 1 can of diced tomatoes(796 ml)
  • 1 can of tomato paste(156 ml)
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 1 green bell pepper, diced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 1/2 tsp cayenne pepper
  • 2 tbsp vegetable oil
  • 1 salt and pepper to taste
  • 1 shredded cheddar and sour cream for garnish

Instructions

    Brown the ground meat in oil, breaking it up with a fork.

    Add the onions, bell pepper, and garlic. Cook for 5 minutes.

    Add the spices and cook for 1 minute, stirring.

    Pour in the tomatoes, tomato paste, and kidney beans.

    Let it simmer on low heat for 45 minutes, stirring occasionally.

    Adjust seasoning to taste.

    Serve garnished with grated cheddar and sour cream.
