Traditional Quebec recipe: Confit Hare Legs. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 8 hare legs
  • 500 g duck fat
  • 2 tbsp coarse salt
  • 1 tsp pepper
  • 4 sprigs of thyme
  • 4 crushed juniper berries
  • 2 bay leaves

Instructions

    Rub the legs with salt, pepper, thyme, and juniper.

    Refrigerate for 24 hours.

    Rinse and pat dry.

    Submerge in melted duck fat with the bay leaves.

    Bake in the oven at 275°F (135°C) for 3-4 hours.

    The meat should easily fall off the bone.

    Store in the fat or serve pan-fried.
