Ingredients
- 500 g mixed wild mushrooms(chanterelles, boletes, oyster mushrooms)
- 1 chopped onion
- 2 minced garlic cloves
- 500 ml chicken broth
- 250 ml 35% cream
- 3 tbsp butter
- 2 tbsp flour
- 60 ml dry white wine
- 1 Salt, pepper, and fresh thyme
Instructions

Clean and roughly slice the mushrooms.

Melt the butter and sauté the mushrooms over high heat for 5 minutes.

Add the onion and garlic, cook for 3 minutes.

Sprinkle with flour, mix, then deglaze with white wine.

Add the broth and thyme. Cook for 15 minutes.

Blend half of the soup to retain some texture. Add the cream and season.
