Traditional Quebec recipe: Croquettes de truite. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 400 g flaked cooked trout
  • 250 ml mashed potatoes
  • 1 beaten egg
  • 2 tbsp chopped parsley
  • 1 tbsp fresh dill
  • 1 chopped green onion
  • 125 ml breadcrumbs(for coating)
  • 1 Oil for frying
  • 1 Salt and pepper
  • 1 Tartare sauce for serving

Instructions

    Combine the flaked trout, mashed potatoes, parsley, dill, and green onion.

    Season with salt and pepper. Shape into oval croquettes.

    Dip in beaten egg, then roll in breadcrumbs.

    Fry in oil at 350°F (175°C) for 3-4 minutes per side.

    Drain on paper towels.

    Serve with homemade tartare sauce.
