- 250 ml flour
- 1 tsp salt
- 1 1/2 tsp pepper
- 1 1/2 tsp paprika
- 1 Vegetable oil for frying
- 1 Lemon wedges
- 1 Tartar sauce for serving
Instructions

Mix the flour, salt, pepper, and paprika in a bag.

Add the smelt and shake to coat them well.

Heat the oil to 190°C (375°F) in a deep pot.

Fry the smelt in small batches for 2-3 minutes until golden brown.

Drain on paper towels.
