Traditional Quebec recipe: Hare Gibelotte. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 hare, cut into pieces
  • 4 potatoes, cubed
  • 3 carrots, diced
  • 2 onions, chopped
  • 2 celery stalks, diced
  • 1 can diced tomatoes(398 ml)
  • 1 L broth
  • 125 ml flour
  • 3 tbsp butter
  • 1 Herbes salées du Bas-du-Fleuve
  • 1 Salt and pepper

Instructions

    Flour and brown the hare pieces in butter.

    Add the onions and celery, cook for 3 minutes.

    Add the broth and tomatoes. Simmer for 1 hour 30 minutes.

    Add the potatoes, carrots, and Herbes salées.

    Continue cooking for 30 minutes.

    Gibelotte is a traditional Quebec dish, somewhere between a soup and a stew.
