Traditional Quebec recipe: Hare in Wild Mushroom Sauce. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 cut hare
  • 300 g mixed wild mushrooms
  • 2 chopped onions
  • 3 garlic cloves
  • 250 ml white wine
  • 250 ml chicken broth
  • 125 ml 35% cream
  • 3 tbsp butter
  • 2 tbsp flour
  • 1 Fresh thyme and parsley
  • 1 Salt and pepper

Instructions

    Flour and brown the hare pieces in butter.

    Add the onions and garlic. Deglaze with white wine.

    Add the broth and thyme. Simmer for 1 hour 30 minutes.

    Sauté the mushrooms separately in butter.

    Add the mushrooms and cream to the hare.

    Continue cooking for 20 minutes without boiling.

    Sprinkle with parsley. Serve with polenta.
