Traditional Quebec recipe: Herb-Grilled Moose Steak. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 200g Moose Steaks(loin or sirloin)
  • 3 tbsp olive oil
  • 2 minced garlic cloves
  • 1 tbsp fresh chopped rosemary
  • 1 tbsp fresh chopped thyme
  • 1 tsp cracked black pepper
  • 1 Sea salt to taste
  • 2 tbsp butter

Instructions

    Remove steaks from the refrigerator 30 minutes before cooking.

    Mix oil, garlic, rosemary, thyme, and pepper. Brush over the steaks.

    Preheat BBQ or cast iron skillet over very high heat.

    Sear steaks 3-4 minutes per side for rare to medium-rare.

    Do not exceed medium-rare as moose meat dries out quickly.

    Place a knob of butter on each steak, let rest for 5 minutes under aluminum foil.

    Season with salt and serve with grilled vegetables.
