Traditional Quebec recipe: Herb-Stuffed Speckled Trout. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 whole speckled trout
  • 125 ml breadcrumbs
  • 2 tbsp fresh parsley
  • 1 tbsp chives
  • 1 tbsp fresh dill
  • 2 minced garlic cloves
  • 2 tbsp melted butter
  • 1 Zest of one lemon
  • 1 Salt and pepper

Instructions

    Combine breadcrumbs, herbs, garlic, butter, and lemon zest.

    Season each trout inside.

    Stuff the cavities with the herb mixture.

  4. 4

    Close with toothpicks.

  5. 5

    Bake in the oven at 400°F (200°C) for 20 minutes or grill on the BBQ.
