Ingredients

  • 1 chicken carcass(or 1 whole chicken)
  • 2 whole carrots
  • 2 whole celery stalks
  • 1 onion, cut in half
  • 3 garlic cloves
  • 1 bay leaf
  • 5 black peppercorns
  • 3 L cold water
  • 1 Salt to taste
  • 1 A few sprigs of parsley

Instructions

    Place the carcass in a large pot with the cold water.

    Bring slowly to a boil and skim off the foam.

    Add the vegetables, garlic, bay leaf, peppercorns, and parsley.

    Reduce heat to low and simmer for 3 hours without covering completely.

    Strain the broth through a fine-mesh sieve.

    Let cool and degrease. Keeps for 5 days in the fridge or 3 months in the freezer.
