Ingredients

  • 500 ml dried corn(hominy)
  • 2 tbsp hardwood ashes(or 1 tbsp baking soda)
  • 2 L water
  • 1 ham bone(optional)
  • 1 Salt and butter for serving

Instructions

    Soak the dried corn in water with the ashes (or baking soda) for 12 hours.

    Rinse thoroughly under cold water, rubbing the kernels to remove their outer layers.

    Place in a pot, cover with fresh water, and add the ham bone if desired.

    Cook over low heat for 3-4 hours until the kernels are plump and tender.

    Drain and season with salt and butter.

    Serve as a side dish or in stews.
