Traditional Quebec recipe: Ketchup vert. A beloved classic from Quebec's rich culinary heritage.

Ingredients

  • 12 green tomatoes, chopped
  • 4 onions, chopped
  • 2 green bell peppers, chopped
  • 375 ml white vinegar
  • 375 ml sugar
  • 1 tbsp salt
  • 1 tsp cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp allspice
  • 1 tsp dry mustard

Instructions

    Chop the green tomatoes, onions, and bell peppers.

    Place all ingredients in a large pot.

    Bring to a boil, stirring to dissolve the sugar.

    Reduce heat and simmer for 1 hour 30 minutes to 2 hours, stirring regularly.

    The ketchup should have thickened and the vegetables should be tender.

    Pour into sterilized Mason jars. Seal. Stores for 1 year.
