Traditional Quebec recipe: Lac-Saint-Jean Tourtière with Venison. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g venison, cubed
  • 250 g pork, cubed
  • 250 g hare, cubed(or rabbit)
  • 4 large potatoes, peeled and thinly sliced
  • 2 onions, chopped
  • 500 ml game or beef broth
  • 1 tsp salt
  • 1 1/2 tsp pepper
  • 1 1/4 tsp savory
  • 1 1/4 tsp ground cloves
  • 2 thick pie crusts

Instructions

    Preheat oven to 375°F (190°C).

    Line a large deep dish or cast-iron pot with one pie crust.

    Alternate layers of mixed meats, potatoes, and onions.

    Season each layer with salt, pepper, savory, and ground cloves.

    Pour in the broth until halfway up.

    Cover with the second pie crust, seal the edges, and prick the top.

    Bake for 1 hour at 375°F then reduce to 300°F and continue for 2-3 hours.

    The crust should be golden brown and the broth absorbed.
