Ingredients

  • 1 pre-baked pie crust
  • 1 Filling: 375 ml water, 175 ml sugar, 4 tbsp cornstarch, 3 egg yolks
  • 1 Juice and zest of 2 lemons
  • 2 tbsp butter
  • 1 Meringue: 3 egg whites, 125 ml sugar, 1/4 tsp cream of tartar

    Cook water, sugar, and cornstarch until thickened.

    Remove from heat. Stir in the yolks, lemon juice and zest, and butter.

    Return to heat for 2 minutes, stirring. Pour into the baked crust.

    Meringue: Beat egg whites to soft peaks. Gradually add sugar. Beat to firm peaks.

    Spread the meringue over the filling, touching the edges of the crust.

    Bake at 175°C (350°F) for 12-15 minutes until the meringue is golden.
