Traditional Quebec recipe: Maple and Juniper Salmon Gravlax. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 whole salmon fillet with skin(about 800 g)
  • 80 ml coarse salt
  • 60 ml brown sugar
  • 3 tbsp maple syrup
  • 10 crushed juniper berries
  • 2 tbsp cracked black pepper
  • 1 bunch of fresh dill
  • 1 Zest of 2 lemons

Instructions

    Mix the salt, brown sugar, juniper, pepper, and zest.

    Spread half of the mixture on plastic wrap.

    Place the fillet skin-side down. Drizzle with maple syrup.

    Cover with the remaining mixture and dill.

    Wrap tightly. Place under a weight in the refrigerator.

    Marinate for 48-72 hours, turning daily.

    Scrape off the salt, slice thinly. The juniper adds a unique boreal note.
