Traditional Quebec recipe: Mijoté d'ours à l'érable. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 kg black bear cubes
  • 125 ml maple syrup
  • 80 ml soy sauce
  • 60 ml apple cider vinegar
  • 500 ml beef broth
  • 2 chopped onions
  • 4 garlic cloves
  • 2 tbsp tomato paste
  • 1 tsp ground ginger
  • 3 tbsp oil
  • 1 Salt and pepper

Instructions

    Brown the bear cubes in oil over high heat.

    Add the onions and garlic.

    Mix the maple syrup, soy sauce, vinegar, tomato paste, and ginger.

    Pour over the meat with the broth.

    Simmer, covered, for a MINIMUM of 3-4 hours (internal temperature of 71°C is mandatory).

    Maple syrup mellows the strong flavor of the bear meat.

    Serve over rice or mashed potatoes.
