- 250 ml coarse salt
- 250 ml maple syrup
- 80 ml soy sauce
- 2 tbsp black pepper
- 1 cinnamon stick
- 6 cloves
- 4 star anise(anis étoilé)
- 1 tbsp fresh grated ginger

Heat 1 L of water. Dissolve the salt. Add the maple syrup and soy sauce.
