Traditional Quebec recipe: Marinated Moose Skewers. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 750 g moose in 3 cm cubes(loin or sirloin)
  • 1 red bell pepper, cut into pieces
  • 1 green bell pepper, cut into pieces
  • 1 red onion, quartered
  • 8 whole mushrooms
  • 1 For the marinade
  • 80 ml olive oil
  • 60 ml soy sauce
  • 3 tbsp balsamic vinegar
  • 2 minced garlic cloves
  • 1 tbsp Dijon mustard
  • 1 tsp dried oregano
  • 1 Salt and pepper to taste

Instructions

    Mix all marinade ingredients.

    Marinate the moose cubes in the refrigerator for 4-8 hours.

    Thread the meat cubes onto skewers, alternating with vegetables.

    Grill on the BBQ over high heat for 3-4 minutes per side (medium-rare).

    Do not overcook to keep the meat tender and juicy.

    Serve with rice and a green salad.
