
Mexican Turkey and Sweet Corn Shepherd's Pie
A comforting and flavorful dish, this Mexican shepherd's pie combines a rich filling of ground turkey, sweet corn, black beans, and tomatoes, simmered in a spicy sauce. It's topped with a creamy, cheesy masa harina layer, then baked until golden and bubbly. Perfect for a cozy family evening.
Ingredients
- 500 g Ground turkey
- 1 medium Yellow onion
- 2 cloves Garlic cloves
- 1 medium Red bell pepper
- 250 g Sweet corn (fresh or frozen)
- 400 g Black beans (canned, drained and rinsed)
- 400 g Crushed tomatoes (canned)
- 120 ml Chicken broth
- 2 tsp Chili powder
- 1 tsp Ground cumin
- 0.5 tsp Smoked paprika
- 0.5 tsp Dried oregano
- 2 tbsp Olive oil

- to taste Black pepper
- 180 g Masa harina
- 360 ml Chicken broth
- 30 g Unsalted butter
- 150 g Shredded cheese (e.g., cheddar or Monterey Jack)
- 2 tbsp Fresh cilantro (for garnish)

Preheat your oven to 190°C (375°F).

In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the ground turkey and brown it, breaking it apart, for about 5-7 minutes. Drain any excess fat if necessary.

Add the chopped onion and red bell pepper to the skillet and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Stir in the corn, black beans, crushed tomatoes, 120 ml of chicken broth, chili powder, cumin, smoked paprika, and oregano. Season with salt and pepper. Simmer over low heat for 10-15 minutes, or until the sauce slightly thickens.

While the filling simmers, prepare the masa topping. In a medium saucepan, bring the remaining 360 ml of chicken broth and butter to a boil. Remove from heat and gradually whisk in the masa harina vigorously to prevent lumps.

Return the saucepan to low heat and continue to cook, stirring constantly for 3-5 minutes, until the masa thickens and pulls away from the sides of the pan. Remove from heat and stir in half of the shredded cheese until melted.

Pour the turkey filling into a 9x13 inch (or similar) baking dish. Spread the cheesy masa topping evenly over the filling.

Sprinkle the remaining shredded cheese over the masa topping.

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the dish is bubbly. Let it rest for 5 minutes before serving.
