Ingredients

  • 500 ml all-purpose flour
  • 125 ml durum wheat flour(semolina)
  • 1 packet of active dry yeast(8 g)
  • 60 ml sugar
  • 1 egg
  • 60 ml vegetable oil
  • 125 ml lukewarm water
  • 1 tsp salt
  • 1 Poaching liquid: 3 L water, 125 ml honey
  • 1 Sesame or poppy seeds

Instructions

    Dissolve the yeast in lukewarm water with 1 tsp of sugar. Wait 10 minutes.

    Mix the flours, salt, and remaining sugar. Add the yeast mixture, egg, and oil.

    Knead for 10 minutes to obtain a firm dough.

    Divide into 8 balls, pierce a hole in the center, and shape the bagels.

    Let rise for 20 minutes.

    Poach in boiling honeyed water for 1 minute on each side. Roll in the seeds.

    Bake in the oven at 230°C (450°F) on a baking sheet for 15-18 minutes.
