Traditional Quebec recipe: Moose and Barley Soup. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g moose in small cubes(shoulder)
  • 125 ml pearl barley
  • 1 chopped onion
  • 2 diced carrots
  • 2 diced celery stalks
  • 2 cubed potatoes
  • 1 diced turnip
  • 2 L beef broth
  • 2 tbsp vegetable oil
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 Salt and pepper to taste

Instructions

    Brown the moose cubes in oil.

    Add the onion and cook for 3 minutes.

    Pour in the broth, add the barley, bay leaf, and thyme.

    Simmer, covered, for 1 hour 30 minutes.

    Add the carrots, celery, potatoes, and turnip.

    Continue cooking for 30 minutes.

    Season and serve with crusty bread.
