Traditional Quebec recipe: Moose Cabbage Rolls. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 large green cabbage
  • 750 g ground moose meat
  • 250 ml cooked rice
  • 1 finely chopped onion
  • 1 beaten egg
  • 2 minced garlic cloves
  • 1 tsp salt
  • 1 1/2 tsp pepper
  • 1 can of tomato soup(284 ml)
  • 1 can of diced tomatoes(398 ml)
  • 2 tbsp brown sugar
  • 1 tbsp white vinegar

Instructions

    Blanch the whole cabbage for 5 minutes in boiling water. Carefully remove the leaves.

    Mix the meat, rice, onion, egg, garlic, salt, and pepper.

    Place 2-3 tablespoons of filling on each cabbage leaf.

    Roll, folding in the sides, to form cigars.

    Mix the tomato soup, diced tomatoes, brown sugar, and vinegar.

    Place the cabbage rolls in a Dutch oven or casserole dish, cover with tomato sauce.

    Cover and bake in the oven at 350°F (175°C) for 1h30.
