Traditional Quebec recipe: Moose Stew with Wild Mushrooms. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 kg moose cubes
  • 250 g mixed wild mushrooms(chanterelles, boletes, oyster mushrooms)
  • 2 chopped onions
  • 3 minced garlic cloves
  • 250 ml red wine
  • 500 ml beef broth
  • 2 tbsp tomato paste
  • 3 tbsp flour
  • 3 tbsp olive oil
  • 2 fresh thyme sprigs
  • 1 bay leaf
  • 1 Salt and pepper to taste
  • 1 Fresh parsley for garnish

Instructions

    Flour the moose cubes and brown them in oil.

    Remove and sauté the mushrooms for 5 minutes. Set aside.

    Sauté the onions and garlic in the same pot.

    Deglaze with red wine, add the tomato paste.

    Return the meat, add the broth, thyme, and bay leaf.

    Simmer covered for 2 hours over low heat.

    Add the mushrooms and continue for 30 minutes.

    Sprinkle with parsley and serve with mashed potatoes.
