Traditional Quebec recipe: Osso buco d'orignal. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 moose shank slices, 3 cm thick
  • 3 tbsp olive oil
  • 1 chopped onion
  • 2 carrots, finely diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 250 ml dry white wine
  • 1 can diced tomatoes(398 ml)
  • 250 ml beef broth
  • 1 lemon zest
  • 1 fresh chopped parsley
  • 1 salt and pepper to taste

Instructions

    Preheat the oven to 325°F (165°C).

    Season the shank slices with salt and pepper, then dredge in flour.

    Sear them in hot oil on both sides in a Dutch oven. Set aside.

    Sauté the onion, carrots, celery, and garlic for 5 minutes.

    Deglaze with white wine. Add the tomatoes and broth.

    Return the shanks to the pot, cover, and bake for 3 hours.

    Prepare the gremolata by mixing the lemon zest, parsley, and garlic.

    Serve the shanks drizzled with sauce and garnished with gremolata.
