Traditional Quebec recipe: Pan-Fried Walleye with Garlic Butter. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 walleye fillets
  • 4 tbsp butter
  • 4 minced garlic cloves
  • 125 ml white wine
  • 2 tbsp fresh parsley
  • 1 juice of half a lemon
  • 1 salt and pepper

Instructions

    Season the fillets with salt and pepper.

    Melt 2 tbsp butter over medium-high heat.

    Cook the fillets 3-4 minutes flesh-side down, 2 minutes skin-side down.

    Remove the fillets. Add the remaining butter and garlic.

    Cook the garlic for 30 seconds (do not burn).

    Deglaze with white wine. Add the lemon juice.

    Spoon the garlic sauce over the fillets. Sprinkle with parsley.
