Ingredients

  • 4 medium Parsnips
  • 2 medium Apples (e.g., Honeycrisp or Cortland)
  • 250 ml Heavy cream (35%)
  • 100 g Grated cheese (Gruyère or Comté)
  • 2 tbsp Butter
  • 1 tsp Boreal spice blend (e.g., dune pepper, sweet gale)
  • 1 small Shallot

Instructions

    Preheat the oven to 190°C (375°F). Grease a medium-sized gratin dish.

    Peel the parsnips and apples, then slice them thinly (about 2-3 mm thick) using a mandoline or a sharp knife.

    In a small saucepan, melt 1 tbsp of butter over medium heat. Add the chopped shallot and sauté until translucent, about 2-3 minutes.

    Pour the heavy cream (35%) into the saucepan. Add the boreal spices, salt, and pepper. Bring to a gentle simmer, then remove from heat.

    Arrange half of the parsnip and apple slices alternately in the gratin dish. Pour half of the flavored cream over them. Repeat the process with the remaining parsnips, apples, and cream.

    Generously sprinkle the grated cheese over the top of the gratin.
