Traditional Quebec recipe: Pemmican de caribou. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g very lean caribou meat
  • 250 ml dried blueberries or cranberries
  • 125 ml melted caribou or beef fat
  • 1 tsp salt
  • 1 Pepper to taste

Instructions

    Slice the meat into thin strips.

    Dry in a dehydrator or oven at 150°F (65°C) for 8-12 hours.

    The meat should be completely dry and brittle.

    Grind the dried meat into a powder using a food processor.

    Mix the meat powder with the crushed dried fruit.

    Incorporate the lukewarm melted fat to bind the mixture.

    Press into a mold or form into patties.

    Refrigerate. Keeps for several weeks.
