Ingredients

  • 500 g fatty ground pork
  • 250 g ground pork liver
  • 250 g ground veal
  • 1 finely chopped onion
  • 2 minced garlic cloves
  • 1 beaten egg
  • 60 ml cognac or brandy
  • 1 tsp four-spice powder
  • 1 Salt and pepper
  • 1 Pork fatback slices for lining

Instructions

    Combine all meats, onion, garlic, egg, cognac, and spices.

    Line a loaf pan with pork fatback slices.

    Pour the mixture into the pan and cover with fatback slices.

    Cover with aluminum foil and place in a water bath.

    Bake in the oven at 175°C (350°F) for 1h30 to 2h.

    Let cool with a weight on top. Refrigerate for 24 hours before serving.
