- 500 g fatty ground pork
- 250 g ground pork liver
- 250 g ground veal
- 1 finely chopped onion
- 2 minced garlic cloves
- 1 beaten egg
- 60 ml cognac or brandy
- 1 tsp four-spice powder
- 1 Salt and pepper
- 1 Pork fatback slices for lining
Instructions

Combine all meats, onion, garlic, egg, cognac, and spices.

Line a loaf pan with pork fatback slices.

Pour the mixture into the pan and cover with fatback slices.

Cover with aluminum foil and place in a water bath.

Bake in the oven at 175°C (350°F) for 1h30 to 2h.
