Ingredients

  • 4 pommes de terre en frites
  • 200 g fromage en grains
  • 4 oeufs
  • 4 tranches de bacon
  • 1 Sauce hollandaise simplifiée: 3 jaunes d'oeufs, 125 ml de beurre fondu, jus d'un demi-citron
  • 1 Sel et poivre
  • 1 Ciboulette

Instructions

    Prepare the fries (see poutine recipe) and keep them warm.

    Cook the bacon until crispy and crumble it.

    For the Hollandaise sauce: Whisk the egg yolks over a double boiler, slowly drizzle in the butter. Add the lemon.

    Fry the eggs sunny-side up in butter.

    Arrange the fries on plates, add the cheese curds.

    Spoon Hollandaise sauce over, top with the egg and bacon. Garnish with chives.
