Ingredients

  • 500 g dried white beans, soaked overnight
  • 250 g streaky salt pork
  • 1 onion studded with 3 cloves
  • 80 ml molasses
  • 60 ml ketchup
  • 2 tbsp dry mustard
  • 60 ml brown sugar
  • 1 tsp salt
  • 1 Water to cover

Instructions

    Drain the beans. Place them in a pot, cover with water, and bring to a boil for 10 minutes.

    Drain and transfer to a stoneware pot or an oven-safe Dutch oven.

    Bury the studded onion and salt pork in the center of the beans.

    Mix the molasses, ketchup, dry mustard, brown sugar, and salt. Pour over the beans.

    Add hot water to cover. Place the lid on.

    Bake in the oven at 135°C (275°F) for 6 to 8 hours. Add water as needed. Uncover for the last hour.
