Traditional Quebec recipe: Roasted Partridge with Apples. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 2 whole cleaned partridges
  • 2 Cortland apples, peeled and sliced
  • 4 bacon slices
  • 2 tbsp butter
  • 1 onion, quartered
  • 125 ml apple cider
  • 1 tbsp fresh thyme
  • 1 Salt and pepper to taste

Instructions

    Preheat oven to 375°F (190°C).

    Salt and pepper the inside and outside of the partridges.

    Stuff each cavity with apple slices and thyme.

  4. 4

    Wrap the breasts with bacon slices.

  5. 5

    Place in a roasting pan with the onion and butter.

  6. 6

    Roast for 45-50 minutes, basting regularly with the pan juices.

  7. 7

    Add the cider halfway through cooking.

  8. 8

    The partridge is cooked when the juices run clear.
