Roasted Partridge with Apples

- 2 whole cleaned partridges
- 2 Cortland apples, peeled and sliced
- 4 bacon slices
- 2 tbsp butter
- 1 onion, quartered
- 125 ml apple cider
- 1 tbsp fresh thyme
- 1 Salt and pepper to taste
Instructions

Preheat oven to 375°F (190°C).

Salt and pepper the inside and outside of the partridges.

Stuff each cavity with apple slices and thyme.

Wrap the breasts with bacon slices.

Place in a roasting pan with the onion and butter.

Roast for 45-50 minutes, basting regularly with the pan juices.

Add the cider halfway through cooking.

The partridge is cooked when the juices run clear.
