- 4 salmon fillets with skin
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1 tsp ground coriander
- 1 1/2 tsp cayenne pepper
- 2 tbsp olive oil
- 1 juice of one lemon
- 1 salt and pepper

Mix all the spices with the oil.

Coat the salmon fillets.

Heat a cast iron griddle or plancha over very high heat.

Sear flesh-side for 3 minutes, then skin-side for 4 minutes.
