Traditional Quebec recipe: Salmon à la Plancha with Spices. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 salmon fillets with skin
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 1/2 tsp cayenne pepper
  • 2 tbsp olive oil
  • 1 juice of one lemon
  • 1 salt and pepper

Instructions

    Mix all the spices with the oil.

    Coat the salmon fillets.

    Heat a cast iron griddle or plancha over very high heat.

    Sear flesh-side for 3 minutes, then skin-side for 4 minutes.

    Drizzle with lemon juice. The skin should be very crispy.
