Traditional Quebec recipe: Slow Cooker Moose Stew. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 kg moose cubes
  • 1 packet of dehydrated onion soup mix
  • 1 can of cream of mushroom soup(284 ml)
  • 250 ml red wine
  • 2 tbsp tomato paste
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 8 mushrooms, sliced
  • 1 onion, quartered
  • 1 tsp dried thyme
  • 1 Salt and pepper to taste

Instructions

    Place the moose cubes in the slow cooker.

    Add the vegetables around the meat.

    Mix the onion soup mix, cream of mushroom soup, wine, and tomato paste.

    Pour the mixture over the meat and vegetables.

    Sprinkle with thyme, salt, and pepper.

    Cook on LOW for 8 hours or on HIGH for 5-6 hours.

    Serve over rice or egg noodles.
